Esko Nurmi (December 30, 1931 – December 6, 2004) was a Finnish veterinarian and professor. He served as the director and professor at the State Institute of Veterinary Medicine from 1974. Prior to that, from 1970 to 1974, he held the position of professor of food hygiene at the veterinary college. Nurmi focused on the microbiology of meat products, food poisoning, and food infections, particularly in preventing salmonella infections in broilers. He developed the 'Nurmi concept' for controlling salmonella in chicks.
