David J. Jenkins is a professor in the Department of Nutritional Sciences at the University of Toronto, Canada. He is credited with developing the concept of glycemic index, which explains how carbohydrate-containing foods affect blood sugar levels. His first research paper on this subject was published in the American Journal of Clinical Nutrition in 1981. Jenkins has authored at least 15 other clinical studies on the effects of glycemic index and is currently focused on conducting clinical trials to clarify dietary possibilities for the prevention of chronic diseases such as heart disease, cancer, and diabetes.
